B'S FRITO POLLO

STORY

B’s Frito Pollo was not the original plan when the outgoing, risk-taking serial entrepreneur B Roberson moved to Mexico with her beloved fur baby Coco. However, she always had a desire to have her own restaurant. After moving solo to a foreign country, 3 years of putting her passion for cooking behind her and some failed partnerships, she decided to start her business alone: B’s Frito Pollo was born! As she embarked on this new journey in Mexico, she chose the name “Frito Pollo” in Spanish, which is the literal translation of “Fried Chicken” in English, to marry Mexico and the US.

Because no dream comes without obstacles, B had her fair share of stepbacks. The partnership that started the business ended, and so did the recipe. The renowned recipe everyone enjoys today was created out of necessity - “I’d rather fail forward than fall back on my dreams.”, B said to herself.

 

She then spent 3 weeks perfecting her own recipe, inspired by her mother’s method and the ancestors that spoke to her in dreams, giving her clear indications on what spices to use to create the best fried chicken anyone would taste. It worked!

 

B’s Frito Pollo was opened June 2022 and offers the most mouthwatering flavorful Southern Fried Chicken in Mexico. We also offer other southern staples, like B’s World Famous Mac n Cheese. 

 

We have grown to be the go-to for fried chicken for those that enjoy quality. We look forward to welcoming new and old customers at our food truck!
